After high school I became a fast food junkie, leading to a 25 pound weight gain. All of these empty calories resulted in a very tired, sick, and generally unhappy 20 year old girl.
I did loose some of the weight a year after by cutting out fast foods and sugar laden desserts. But my energy levels were still not fantastic, colds and flues would still make their presence on a quarterly basis and I struggled to maintain a consistent weight. I fluctuated up and down 10-15 pounds over the next five to six years. It wasn't until I gave up another kind of processed food, animal products, that my health and well being completely changed for the better.
Giving up animal products was a slow transition for me, it wasn't overnight. I first became a Pescetarian (someone who still eats fish and dairy products), then switched to vegetarian. As my health started to improve, I began seeking out more information about healthy living and stumbled upon a whole foods plant based vegan diet (thanks to Happy Herbivore). A few weeks after adopting this lifestyle, my health and energy drastically improved! I feel so clear headed and full of life. Now I am very active and enjoy many activities such as: running, horseback riding, golfing, hiking, skiing, working out on our elliptical and light weight training.
I am so passionate about a whole foods lifestyle that I want to absorb all the information I can. It has become a hobby of mine to read books, articles, blogs about anything plant based. In the spring of 2012 I acquired a certificate in plant based nutrition from ecornell. I plan to continue educating myself in this field, write about topics of interest, play around with recipe creations, and keep moving forward physically, as well as emotionally.
